Apple Cake Recipe                     


2 cups diced apples
1 cup sugar
1/4 cup vegetable oil
1 egg beaten
1 cup all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
Optional: chopped nuts (not included in nutritional analysis)

Combine apples and sugar and let stand for 30 minutees. Add oil and beaten egg. Mix, then add the remaining ingredients and mix well. Bake in 9" square pan at 375 degrees F for 30 minutes or until done.
